Rustic Kitchen, Return to Basics - a Gluten Free bakery | Oshkosh, WI

Sinful Cinnamon Rolls, Ginger Kick Carrot Muffins, Blueberry Crumb Muffins, PJ's Signature Sourdough (Boule/Roll/Sandwich Bread), Authentic Pizza Dough and Pender Isle Chocolate Zucchini Cupcakes are just a few of the delightfully delicious GLUTEN FREE baked goods from Oshkosh's Rustic Kitchen.  Owner and baker, Patrick (PJ) Ramstack, invited me to come photograph the baking process as well as his delectable creations before he hand delivered them to local cafes, co-ops, grocery stores, and specialty food stores.

Having dietary restrictions and digestive health issues is a problem for many folks, including PJ, which is why he started the bakery.  He hopes to one day open a small cafe and work towards making Oshkosh and the Fox Valley a model for what gluten free living can be.
